Oven-baked chicken with panko breadcrumbs

Recipe Ingredients for Oven-baked chicken

1/3 cup low-fat buttermilk
1/2 tsp salt
1 cup panko (Japanese breadcrumbs)
24 ounce chicken breast halves, skinned

Recipe Directions for Oven-baked chicken

  1. Combine first 2 ingredients in a shallow dish.

  2. Place panko in a shallow dish.

  3. Dip chicken, one piece at a time, into buttermilk mixture; dredge in panko.

  4. Place chicken on a baking sheet lined with parchment paper.

  5. Lightly coat chicken with cooking spray.

  6. Bake at 400 for 40 minutes or until done, turning after 20 minutes.
