Recipe Ingredients for Outback CopyCat Bread

2 1/2 cups water
4 tablespoons butter
2 tablespoons molasses
1/2 cups honey
3 1/2 cups whole wheat flour
3 1/2 cups white bread flour
2 tablespoons cocoa powder
2 tablespoons yeast
1 ounce vital wheat gluten
2 teaspoons salt
4 tablespoons flaxseed

Recipe Directions for Outback CopyCat Bread

  1. Combine first four ingredients (water temp should be 100-110F) in mixer bowl. Mix well. Pour wheat flour on top, then add cocoa, yeast and gluten. Stir until well mixed, then let sit for 15 minutes to autolyze.

  2. Add white bread flour, salt and flaxseed one cup at a time, while mixing dough with dough hook about 5 minutes until dough pulls away clean from the side and is soft. If it's too wet, add a little more flour.

  3. Gather dough and let rise in a bowl until doubled, about 30-35 minutes. Punch down, divide into 2 evenly sized pieces, shape into loaves, place into loaf pans and let rise until doubled in size again, about 30-35 more minutes.

  4. Bake at 350F for 35 minutes.
