Recipe Ingredients for Ouray Breakfast Casserole

8 oz potatoes, hash brown
3 eggs, slightly beaten
8 oz bacon, diced
1/4 onion, med
1 cup cheddar cheese
1 cup monterey jack cheese
1/2 cup picante sauce
1 cup green chilis, diced
3/4 cup non-fat cottage cheese

Recipe Directions for Ouray Breakfast Casserole

  1. Dice bacon and onion and fry until bacon is cooked and onion is soft and translucent.

  2. While cooking the bacon and onion, preheat the oven to 350 F. Mix remaining ingredients together and add the bacon onion mixture.

  3. Pour mixture into greased 8X8 casserole dish.
