Recipe Ingredients for Osso Buco

1 tbs olive oil
1 kg osso buco
150 g brown onion, diced
2 cloves garlic, crushed
100 g celery, diced
180 g carrot, diced
2 tbs tomato paste
125 ml white wine
250 ml beef stock
250 ml water
400 g crushed tomatoes
1 tsp rosemary
300 g eggplant, chopped
200 g green capsicum, chopped
200 g yellow capsicum, chopped

Recipe Directions for Osso Buco

  1. Heat half of the oil in a large saucepan; cook osso buco, in batches, until browned all over.

  2. Heat remaining oil in same saucepan: cook onion, garlic, celery, and carrot, stirring, until vegetables soften. Add paste, wine, stock, water, undrained tomatoes and rosemary; bring to a boil.

  3. Return osso buco to saucepan, fitting pieces upright and tightly together in a single layer; return to a boil. Reduce heat, simmer, covered, 1.5 hours. Add eggplant; simmer, uncovered, 15 minutes. Add capsicum; cook about 15 minutes or until vegetables are tender.

  4. Remove osso buco and vegetables from dish, cover to keep warm. Bring sauce to a boil; boil, uncovered, about 10 minutesw or until sauce thickens slightly.

  5. Divide osso buco and vegetables among serving plates, top with sauce.
