Lamb Shanks with carrots, onions, and celery. Cooked to death and yummy.

Recipe Ingredients for Osso Buco

500 g lamb shanks
5 tbsp butter
2 medium carrots
2 stalks celery
2 medium onions
3/4 cup all purpose flour
2 tbsp olive oil
1 cup dry white wine
14 oz canned tomatoes
1 1/2 cups vegetable broth
1 tsp dried basil
1/2 tsp dried rosemary
1/4 tsp dried thyme
1 g bay leaf
1/4 tsp salt
1/4 tsp pepper
1 clove garlic
3 tbsp parsley
1 tsp grated lemon peel

Recipe Directions for Osso Buco

  1. Salt and pepper the shanks, dredge them in flour to coat lightly, and brown in oil over medium heat in a skillet.

  2. In a Dutch oven, melt 3tbsp of butter and saute the carrots, celery and onions. Add the minced garlic clove.

  3. As the shanks brown, add them to the Dutch oven. Add the wine to the skillet and scrape up the brown bits from browning the shanks. Add this to the pot.

  4. Add the tomatoes, squeezing them into smaller pieces or chopping them first.

  5. Add the basil, rosemary, thyme, bay leaf, salt and pepper.

  6. Bring to a boil, then simmer for 1 1/2 - 2 hours until the meat is very soft.

  7. Remove the shanks from the pot and reduce the liquid over high heat until slightly thickened. Return the meat to the pot.

  8. Mix the minced garlic, parsley and lemon peel and sprinkle over the shanks.
