Recipe Ingredients for Osso Bucco (Heart Smart by Bonnie Stern)

1/4 cup Robin Hood All Purpose Flour
0.25 tsp Salt, Table
0.5 tsp Pepper, Black
24 oz Veal, Shank (Fore And Hind)
2 1tsp Vegetable Oil, Canola
2 medium (2-1/2" dia) Onions
4 clove Garlic
2 stalk, medium (7-1/2" - 8" long) Celery
2 medium Carrots
6 oz Wine
450 mL Campbell's Chicken Broth (No Salt Added)
28 oz Splendido Plum Tomatoes
1 fl oz Lemon Juice
0.5 tsp Rosemary, Dried
0.5 tsp Pepper, Black
2 cup Rice, White, Short-grain
1 cup Peas, Green

Recipe Directions for Osso Bucco (Heart Smart by Bonnie Stern)

  1. Combine flour, salt and pepper. Pat veal dry and dust with seasoned flour.

  2. Heat oil in a Dutch oven on medium-high heat. Add veal and brown on all sides, about 10 to 15 minutes in total. Remove meat from pan.

  3. Add onions, garlic, celery and carrots to pan. Reduce heat to medium and cook gently for about 10 minutes, or until fragrant and tender.

  4. Add wine and increase heat. Bring to a boil and cook until half the wine evaporates. Add tomatoes, breaking them up with a spoon. Add lemon juice, rosemary and pepper.

  5. Return veal to pan. Cover and cook in a preheated 350F oven for 2 to 4 hours, or until veal is very tender. If sauce is thin, remove veal to a platter and keep warm. Bring sauce to a boil and cook until thickened.

  6. About 20 minutes before serving, bring a large pot of water to a boil and add rice. Return to a boil and cook for 10 to 12 minutes, or until tender. Add peas and allow to rest for 2 minutes. Drain rice and peas in a sieve. Season with salt.
