Recipe Ingredients for Orzo Veggie Side Dish

1 cup orzo
2 cups low sodium chicken stock
1/4 cup diced red pepper
1/8 cup diced onion
1/4 cup chopped spinach
2 teaspoons lemon juice

Recipe Directions for Orzo Veggie Side Dish

Sautee red pepper, onion & spinach in a little of the chicken stock for 2-3 minutes. Add in the rest of the chicken stock, orzo and lemon juice and boil rapidly for 6-8 minutes. Remove from heat and let sit with lid on until needed. Enjoy!
