Recipe Ingredients for Orzo Tomato Soup with Tofu and Basil

2 teaspoons extra-virgin olive oil
2 small onions, finely chopped
2 cloves garlic, finely chopped
20 oz condensed tomato soup, preferably low-sodium
2 large tomatoes, seeded and coarsely chopped
1/3 cup orzo
1/4 cup freshly grated Parmesan cheese
4 tbsp fresh basil leaves, slivered
8 oz extra firm tofu, cubed and browned

Recipe Directions for Orzo Tomato Soup with Tofu and Basil

  1. Heat oil in a saucepan over medium-high heat.

  2. Add cubed tofu and onion and sauté until it begins to color, 2 to 3 minutes.

  3. Add garlic and cook for 1 minute more.

  4. Add soup, tomato, orzo and water. Bring to a boil.

  5. Reduce heat to low and simmer, covered, until the orzo is tender, about 10 minutes.

  6. Stir occasionally to prevent the orzo from sticking.

  7. Ladle into soup bowls and garnish with cheese and basil.
