Recipe Ingredients for ORZO STUFFED PEPPERS

224 g Orzo
3 cup baby arugula
1/4 cup Reduced Fat Feta Traditional Crumbled
1 tablespoon olive oil
2 red peppers
4 teaspoon balsamic vinegar

Recipe Directions for ORZO STUFFED PEPPERS

  1. Preheat oven 400 degrees

  2. Balsamic Vinegar can be either white or brown, whatever you prefer. I use a flavored Cranberry Pear White Balsamic.

  3. Cook Orzo according to package directions and drain.

  4. Return HOT orzo to pot. Add chopped baby arugula, feta, olive oil, salt and pepper and stir. Heat will wilt arugula and melt feta.

  5. Fill peppers and transfer to a baking dish.

  6. COVER WITH FOIL - bake 35 to 40 minutes until peppers are tender.

  7. Drizzle Balsamic over top and serve.
