Recipe Ingredients for Orzo with Squash

1/2 tbs oil, olive
1 onion, small, chopped
550 grams squash, yello, chopped
1/4 cup wine, white
1 1/2 cup chicken broth
1 tbs parmesan cheese
1 tsp herbs

Recipe Directions for Orzo with Squash

  1. Saute onion for 2 minutes in oil which has been heated. Add squash and saute another 3 minutes. Add dry orzo and stir around pan. Add wine and stir until liquid evaporates. Add broth 1/4 cup at a time until liquid is absorbed. Stir often.

  2. Add parmesan and spices and salt & pepper to taste.
