Wonderfully fragrant, spinach and orzo.

Recipe Ingredients for Orzo with spinach and mushrooms

8 oz orzo, uncooked
10 oz spinach
2 tbsp garlic, chopped
1 onion, medium, chopped
1 cup mushrooms, sliced
2 tbsp olive oil
1/3 cup sun dried tomatoes, chopped
1/2 cup reduced fat feta cheese

Recipe Directions for Orzo with spinach and mushrooms

  1. Cook orzo al dente per package directions.

  2. Heat olive oil in saute pan.

  3. Add garlic and onion, saute until crisp tender, about 3 minutes.

  4. Add mushrooms. Saute until liquid is released.

  5. Add spinach, thawed and lightly squeezed dry.

  6. Add sun-dried tomatoes at the end.

  7. Keep warm while orzo is cooking.

  8. Divide spinach mixture on top of orzo and sprinkle with feta cheese.
