1 lb. orzo pasta, cooked al dente 1.5 lbs. Jumbo shrimp, steamed 6 min. 2 red bell peppers, cut into julienne strips 1.5 c. shredded carrot 1 spring onins/bunch 1 c. cherry tomatoes 3/4 lb. provolone, cut into cubes 1/3 c. extra virgin olive oil 1/3 c. balsamic vinegar 1 T. romano cheese, grated 1 T. oregano 1/2 T. sugar 1/2 T. basil 2 minced garlic cloves 1 T. salt 1/2 t. pepper

Recipe Directions for Orzo Shrimp Pasta Salad

  1. Cook pasta, drain. Make marinade (romano cheese, oregano, basil, sugar, garlic, salt & pepper); steam shrimp. Prepare and mix all salad ingredients except provolone.

  2. Blend in the marinade and refrigerate for at least 8 hours or overnight.

  3. Add cheese an hour or two before serving.
