makes 10 1-cup servings? *can be made 6-8 hours ahead; cover and refrigerate. Bring to room temp before serving. (It tastes even better the next day!)

Recipe Ingredients for Orzo Salad

1/2 c olive oil
4 T fresh lemon juice
1 oz garlic minced
1 t dried oregano
1 t kosher salt
1/4 t ground pepper
1 t sugar
2 c orzo
1/2 c pine nuts
1 1/2 c golden raisins
6 T finely chopped kalamata olives
6 T finely chopped red onion
1 c thinly sliced fresh basil
4 oz feta cheese

Recipe Directions for Orzo Salad

  1. Whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and sugar in small bowl. Set aside.

  2. Salt a pot of boiling walter and add orzo. Cook, stirring occasionally, until al dente, 8-10 min.

  3. Meanwhile, toast pinenuts in skillet over medium low heat, swirling constantly - approx 5 min.

  4. Drain orzo & transfer to large bowl. Add dressing to hot pasta and toss to coat. Let cool to room temp, stirring occasionally

  5. Add pine nuts, raisins, olilves, red onion, and basil and stir to combine.

  6. Add feta and toss lightly

  7. Adjust seasonings to taste.
