A delicious risotta made with Orzo pasta instead of Aborrio Rice. (what I happened to have in the pantry one night)

Recipe Ingredients for Orzo Risotto

8 oz Orzo
12 spears asparagus (cut into 1 inches pieces)
1 whole tomato (chopped)
14 1/2 oz chicken broth
1/4 cup parmasan cheese

Recipe Directions for Orzo Risotto

  1. Boil the orzo in the chicken broth stirring often so it doesn't stick to the pan. Keep boiling down and once the liquid starts aborbing lower the heat.

  2. Meanwhile cook the Asparagus in water until tender and then strain the water. Once the Orzo is tender stir the asparagus into the Orzo. Cut up a tomato and mix that in and then stir in 1/4 cup of parmasan cheese.

  3. Enjoy!
