Quick, easy & goes with a variety of main dishes. The red peppers add just a touch of sweetness.

Recipe Ingredients for Orzo Pilaf

2 tbsp butter
1/2 cup onion, finely chopped
1/2 cup bell pepper, finely chopped
1/2 cup carrot, finely chopped
8 oz orzo
2 cloves garlic, minced
1 2/3 cups water
1 dash salt
1 dash pepper
2 tbsp Parmesan cheese, freshly grated

Recipe Directions for Orzo Pilaf

Heat the butter in a medium saucepan over medium-high heat. Add onions, peppers & carrot and saute until softened, about 7 minutes. Add the orzo and cook, stirring often, until golden. Add the garlic and cook one more minute. Add salt, pepper and then the water; bring to a boil. Cover, reduce heat to medium-low and simmer until all of the water is absorbed, about 15 minutes. When done, stir in the Parmesan cheese. Makes 8 1/2 cup servings.
