A cool, refreshing pasta salad that makes for a delicious and easy main dish on hot summer nights.

Recipe Ingredients for Orzo Pasta

1 lb orzo
3 small tomatoes
1/4 cup olive oil
1/2 cup balsamic vinegar
1 cup cilantro
2 tbsp hot sauce
1/2 lb kalamata olives
1 avocado
15 oz beans
1/4 cup almonds

Recipe Directions for Orzo Pasta

  1. Cook, rinse and cool pasta. Drain beans.

  2. Chop tomatoes, almonds and cilantro.

  3. Mix all ingredients except avocado.

  4. Slice avocado and serve on top of salad.
