Orzo with Kale & Grape Tomatoes

Recipe Ingredients for Orzo with Kale & Grape Tomatoes

128 g 1/2 cup orzo pasta
1/2 cup grape tomatoes, sliced in half
1 cup fresh kale, roughly chopped
1/4 cup lemon juice
1 clove garlic, minced
1/2 tsp fresh thyme, minced
1 tbsp olive oil
3 cups water
1 salt & pepper

Recipe Directions for Orzo with Kale & Grape Tomatoes

  1. Mince garlic & thyme. Put in pot with water, lemon juice, and olive oil.

  2. Bring to a boil.

  3. Ad pasta, grape tomatoes, and kale.

  4. Cook until pasta is done, adding more water if necessary (I added 5 more cups, but cooking them together makes the sauce thicken).

  5. Serve.
