This salad can be served warm or cold.

Recipe Ingredients for Orzo and Feta salad

1 tsp turmeric
1 lb orzo pasta
1/4 cup olive oil
1 tsp salt
1/4 tsp pepper, white
1 tsp parsley, dried
1/8 cup lemon juice
1 cup Kalamata olives, sliced
1/2 tsp sugar
1/2 cup sun-dried tomatoes
1/2 cup feta cheese
8 oz pine nuts

Recipe Directions for Orzo and Feta salad

  1. Bring large pot of water to a boil. Add the turmeric, sun-dried tomatoes and orzo. Cook for 10 minutes. Drain and rinse.

  2. In a bowl large enough to hold the whole salad, make the dressing by blending the olive oil, white pepper, salt, parsley, lemon juice and sugar.

  3. Add the cooked orzo to the dressing and combine. Add the olives, pine nuts and feta. Carefully toss.

  4. Serve.
