This is one of my quick fix recipes. Orzo cooks up super fast and you can prepare everything else while it's boiling away! Be careful toasting the pine nuts, they can burn very easily.

Recipe Ingredients for Orzo with Feta, Pine Nuts and Mixed Greens

2 cups orzo
1 oz feta cheese
3 tbsp pine nuts
2 tbsp olive oil
2 cups chopped mixed greens

Recipe Directions for Orzo with Feta, Pine Nuts and Mixed Greens

  1. Cook orzo according to package directions.

  2. Toast pine nuts in a frying pan over medium low heat, stiring often.

  3. Wash and chop mixed greens and put in a large bowl.

  4. When orzo is cooked, drain and add to the greens. Top with toasted pine nuts.

  5. Drizzle olive oil over the whole thing and mix it up.

  6. Serve topped with crumbled feta.
