A recipe from Anne Burrell, available at the Food Network website. This uses orzo instead of fregula.

Recipe Ingredients for Orzo with Braised Butternut Squash and Tomatoes

2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, chopped
28 oz tomatoes
2 cups butternut squash, diced
1 cup chicken stock
1 g bay leaf
1 1/2 cups orzo, uncooked

Recipe Directions for Orzo with Braised Butternut Squash and Tomatoes

  1. Saute onions with salt and crushed red pepper over medium high heat until the onions are translucent and aromatic, 7 to 8 minutes. Add the garlic and saute another minute.

  2. While the onions saute, run the tomatoes through a food mill or crush them. Add the tomatoes plus a can of water (28 oz) to the onion and garlic mixture. Season and cook over medium heat 10 to 15 minutes or until the water has reduced. Add the squash, stock, and bay leaf. Taste for seasoning. Cook until the squash is cooked through and most of the liquid has absorbed, 20-30 minutes.

  3. Bring a pan of well-salted water to a boil. Add the orzo and cook until al dente. Strain and mix in with squash-tomato mixture. Add more stock if necessary to return mixture to a stew-like consistency.
