Recipe Ingredients for Orville's Homemade Bread

1 cup warm water
2 packages active dry yeast
3 tablespoons sugar
5 pounds flour
2 tablespoons salt
2 tablespoons vegetable shortening
5 cups warm water

Recipe Directions for Orville's Homemade Bread

  1. DO NOT PREHEAT OVEN!!

  2. Using a two-cup measuring cup, add the yeast and sugar to one cup of warm water. Let set until ready (it takes about 10 minutes and will double in height).

  3. Melt the shortening.

  4. In a large metal or glass bowl (use a 6-8qt bowl), combine flour, salt, shortening, water, and yeast mixture. Use a spoon at first, but then use your hands.

  5. Turn out onto a counter and knead until smooth (time varies according to the kind of flour you use, but the 50/50 flour I normally use takes about 20 minutes) and no longer sticky feeling. You might need to add a bit of extra flour, depending on the humidity.

  6. Grease the bowl, then add the dough. Turn the dough over, making sure that the entire ball is greased. Cover and let rise until doubled, approximately one hour.

  7. Punch down the risen dough, pull edges into the center, and turn over. Cover and let rise again until doubled, approximately 30 minutes.

  8. Grease bread pans and divide dough into six loaves.

  9. Knead each loaf a bit, then place into pans and let rise for another hour.

  10. Turn on oven to 375F.

  11. Bake loaves for 40-45 minutes.

  12. Wrap loaves in a damp towel to cool (this also softens the crust).
