1. Heat oil in large saucepan over medium high heat. Add onions and cook, until softened. Stir in tomatoes and water until sauce has reduced by a third, 2 to 3 hours. Season with salt and pepper to taste. 2. Whisk together ricotta, egg yolk and nutmeg. 3. Preheat oven to 350 degrees. Spread thin layer of tomato sauce in large 9 x 13 inch baking pan Sprinkle lightly with herbs. 4. Place layer of pasta in pan. Spoon Ricotta mixture on pasta and sprinkle with Mozzarella and Parmesan cheese, spoon sauce and sprinkle herbs, salt and pepper. Repeat layering. 5. Bake 45 to 60 minute until cheese has melted.

2 tablespoons olive oil
2 large onions, chopped
8 lbs. tomatoes, peeled, seeded & diced
2 cups chicken soup
1 tsp. kosher salt
2 tsps basil, chopped
2 tsps oregano, chopped
15 oz whole milk ricotta cheese
1 egg yolk
1/4 tsp. nutmeg, grated
1 lb pasta
3/4 lb. mozzarella cheese, grated
1/3 cup Parmesan, grated
1 lb. fresh spinach leaves, steamed
