Recipe Ingredients for Oriental Vegetable Slaw

1 c snow peas, fresh
10 oz cabbage, shredded
1 c baby corn, drained
2/3 c mushrooms, straw
3 tbsp black sesame seeds
1/4 c rice vinegar
3/4 tbsp sesame oil
2 tbsp peanut oil, substitute canola oil if allergic

Recipe Directions for Oriental Vegetable Slaw

  1. In a small bowl, whisk together the vinegar, sesame oil, and peanut oil. Season with salt and pepper to taste. (makes about 1/4 c)

  2. Blanch the snow peas, drain, and place in large salad bowl.

  3. Add shredded cabbage or cole slaw mix, baby corn, mushrooms, and sesame seeds.

  4. Add dressing to taste and gently toss.

  5. Serve immediately.

  6. Add 1/2 cup of chow mein noodles for an added crunch, if desired.
