You can use most any greens in place of the bok choy

Recipe Ingredients for Oriental Soup

2 t. dark sesame oil
7 oz. shiitake mushrooms, trimmed and thinly sliced
3 T. fresh ginger, chopped and peeled
3 c. fat-free, reduced-sodium chicken broth
3 c. water
1 T. reduced-sodium soy sauce
3 c. chopped baby bok choy
2 T. sliced green onions
2 T. chopped fresh cilantro
1 lb. shrimp, peeled and deveined
1/4 c. fresh lime juice

Recipe Directions for Oriental Soup

  1. Heat oil in large Dutch oven coated with cooking spray over med-high; saute mushrooms and ginger 5 minutes.

  2. Add next 3 ingredients; bring to boil. stir in next 4 ingredients; cover, reduce heat and simmer 3 min. or until shrimp are done. Stir in lime juice just before serving.
