Al dente risotto with Shiitake Mushrooms

Recipe Ingredients for Oriental Mushroom Risotto

65 g Shiitake Mushrooms (sliced)
1 stock cube
40 g onion
1 tspn olive oil
1 litre hot water
100 g Arborio rice
2 tspn soy sauce
1 tspn oyster sauce
5 g coriander leaves (raw)

Recipe Directions for Oriental Mushroom Risotto

  1. Lightly fry onions in Oil on med heat till translucent

  2. Add Mushrooms and fry for 1 minute

  3. Add rice and fry for 1 minute

  4. Combine water, stock cube, Soy and oyster sauce.

  5. slowly add stock by half cupful until all absorbed - stirring frequently - test rice if more moisture required add a little more hot water - taste to check al dente then serve sprinkled with fresh chopped coriander
