Recipe Ingredients for oriental eggplant salad

2 eggplant, peeled (yield from 1-1/4 lb) Eggplant
1 tbsp Oil, Sesame
1.5 serving Blue Dragon Japanese Rice Vinegar
0.25 cup, chopped Onions, Spring Or Scallions
1 tbsp Soy Sauce

Recipe Directions for oriental eggplant salad

Small cubes of aubergine with a sprinkle of salt and steam in microwave , add 2 tbspn soy , 1 tbspn sesame oil , 1.5 tbspns rice vinegar , sprinkle dried powdered garlic , finely chopped spring onions , stir and serve warm or cold.
