I adapted this recipe from a cookbook of kid's recipes - you can also add Thai noodles if you want (of course that adds calories and carbs), or even add lemongrass to add a different dimension! Very versatile!

Recipe Ingredients for Oriental Chicken Soup

14 oz vegetable stock
3 oz chicken breast
1 cup water
3/4 cup carrots, cut in matchsticks
1 cup fresh spinach, cut
1/4 cup frozen green peas
1/4 cup red onion, thinly sliced
1/2 cup extra firm tofu
1/4 cup fresh cilantro
2 1/2 tsp soy sauce, light
1 1/2 tsp olive oil
1 tsp ground ginger

Recipe Directions for Oriental Chicken Soup

  1. cook chicken breast - either poach or saute in cooking spray.

  2. add chicken to the stock and water.

  3. add carrots to soup and cook for only about 3 minutes.

  4. while carrots are cooking, saute the tofu (I use 1/3 of an extra firm tofu - just slice it in 3 and it comes out to just about 1/2 cup - saute it in one piece, then cut it in cubes), and the sliced onion.

  5. add the tofu and onion to soup when they are nicely browned.

  6. add green peas and spinach to soup, cook for just a couple of minutes. (if you use Thai noodles, now is the time to add them and cook as long as the peas and spinach cook)

  7. add remainder of ingredients and remove from heat.

  8. serve really hot!
