Recipe Ingredients for Oregano Chicken w/fresh tomato-olive sauce & sweet potato fries

20 ea. Raw Tomato Cherry
2.25 oz Olives, Ripe, Canned (Small-extra Large)
0.13 cup Parsley
1 Tablespoon Cider Vinegar
0.33 tbsp Extra Virgin Olive Oil
1 cloves, raw Garlic
0.25 tsp Salt, Table
10 pieces Boneless Skinless Chicken Tenderloins
0.5 tsp Oregano, Ground
0.5 tsp Seasoning Blend

Recipe Directions for Oregano Chicken w/fresh tomato-olive sauce & sweet potato fries

  1. In medium bowl, stir together cherry tomatoes (quartered), olives, parsley, vinegar, oil, garlic and salt; set aside.

  2. Warm a 12-inch skillet over medium heat. Remove from heat and spray with cooking spray. Add chicken to skillet. Sprinkle with oregano and lemon-pepper seasoning. Cook 5 minutes, or until no longer pink in center, turning frequently. Put 1/4 of chicken on each plate and spoon 1/4 of the tomato mixture over.

  3. Preheat oven to 475 degrees. Peel sweet potatoes and slice length-wise into 1/2-inch wide strips. Place fries on non-stick backing sheet and spray fries with olive oil cooking spray. Lightly season with salt or other spices, as desired.

  4. Bake 20-30 minutes, or until crisped as desired. Serve fries with sugar-free or low-carb ketchup (such as Heinz One Carb Ketchup).
