Recipe Ingredients for Oregano chicken with fresh tomato-olive sauce

1 cup tomatoes, cherry quartered
12 black olives, pitted, coarsely chopped
2 tbsp parsley, coarsely chopped
1 tbsp cider vinegar
1 tsp olive oil
1 garlic clove, diced
1/4 tsp salt
1 lb chicken, diced
1 tbsp oregano, fresh minced
1/2 tsp lemon pepper seasoning

Recipe Directions for Oregano chicken with fresh tomato-olive sauce

  1. In medium bowl, stir together tomatoes, olives, parsley, vinegar, oil, garlic and salt; set aside.

  2. Warm a 12 inch nonstick skillet over medium heat.

  3. Remove from heat and spray with cooking spray.

  4. Add chicken to skillet.

  5. Sprinkle with oregano and lemon-pepper seasoning.

  6. Cook 5 minutes, or until no longer pink in center, turning frequently.

  7. Put 1/4 of the chicken onto each plate and spoon 1/4 of the tomato mixture over.
