Orechiette with Turkey, Beans and Mascrapone Recipe

This is a variation of a Giada De Laurentis recipe. It is difficult to find Orechiette pasta in a regular grocery store, so I use medium shells pasta. I have used ground pork, and ground sausage (calories will vary). You can also add chopped garlic for added flavor and red pepper flakes. (these additions may change calories).

Recipe Ingredients for Orechiette with turkey, beans and mascrapone

1 package Barilla Shells Medium Dry
2 tablespoons olive oil
3 cloves of garlic
1/2 pound ground turkey
1 small onion, chopped
5 oz chopped frozen spinach
1 cup baby bella mushrooms
15 ounce cannellini beans, drained and rinsed
2 tablespoons chopped fresh oregano leaves
8 oz mascarpone cheese
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Recipe Directions for Orechiette with turkey, beans and mascrapone

  1. Bring a large pot of salted water to a boil over high heat.

  2. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta reserving 1 cup of the cooking liquid.

  3. In a large, heavy skillet warm the olive oil over medium-high heat.

  4. Sautee the garlic until golden.

  5. Add the turkey and onions.

  6. Using a wooden spoon break up the turkey into bite-sized pieces as it browns.

  7. Continue cooking until the turkey is golden and the onions are tender.

  8. Add spinach and stir until spinach is cooked

  9. Add mushrooms and stir until cooked

  10. Add the beans and oregano cook for 2 more minutes. Add the cup of pasta cooking liquid and stir, scrapping up any brown bits from the bottom of the pan.

  11. Add the mascarpone cheese and stir until it dissolved into a light sauce.

  12. Add the salt, pepper, and hot pasta.

  13. Stir until coated and serve.
