A delicious summertime pasta dish that is very low in sodium and high in vitamin C.

Recipe Ingredients for Orecchiete with Tuna and Zucchini

12 oz pasta shells, such as orecchiete
2 medium zucchini, thinly sliced
1 T unsalted butter, or olive oil
2 cloves garlic, peeled and minced
1 lb cherry tomatoes, halved
6 oz tuna, in olive oil
4 T olive oil
1 Salt and freshly ground pepper
2 T fresh basil, chopped

Recipe Directions for Orecchiete with Tuna and Zucchini

  1. Bring 8 c of salted water to a rolling boil in a large pot. Cook the orecchiete according to package directions.

  2. Place the zucchini in a large serving bowl. Drain the pasta over the bowl, and let the zucchini stand in hot cooking water 2 minutes to soften. Drain, and return zucchini to bowl.

  3. Melt the butter (or heat the 1 T oil) in a large skillet. Sauté the garlic and tomatoes over medium heat until softened. Remove from heat. Add the tuna. Toss with the pasta and zucchini, and drizzle the oil over all. Season with salt and pepper to taste, and sprinkle with the basil. Serve immediately.
