6 oranges
20 kumquats
8 oz granulated sugar
1/4 pt cold water
1/4 pint hot water

Recipe Directions for Oranges in caramel - adapted Cordon bleu recipe

  1. Dissolve sugar and cold water in pan over very gentle heat. Watchpoint: dissolve very slowly - boil steadily to prevent crystalisation. Keep heat very low - water must not boil till every grain of sugar is dissolved.Do not stir - but you can move the sugar from the bottom of the pan by drawing a spoon carefully through it. When all the sugar has dissolved bring to the boil and cook until it is a rich brown caramel. Hold the bowl over a pan of luke warm water so that the base just touches the water (to prevent further cooking); cover the hand holding the saucepan with a cloth ( mixture may splash and scald) replace pan on heat to dissolve caramel in water, then pour into a jug or bowl and leave to cool.

  2. Pare a little rind from one orange, and cut ito needle like shreds. cook for I minute in boiling water, then drain and dry.

  3. Cut rind, pith and first membrame from oranges leaving flesh exposed - best done with serrated knife; if you cut with a sawing action you should not lose any juice. Hold each orange top and bottom over a bowl and cut across slices. (you can hold thesetogether with a cocktail stick if you like whole oranges) arrange in deep glass dish, pour caramel on top, sprinkle over with shredded orange peel and chill well.

  4. My variation - deep square glass dish, layer slices of orange and kumquats, pour over caramel - you should get layered effect with orange juice at bottom, caramel on top. ( kumquats have amny seeds- removing these is tiresome and I don't. ) variation replace caramel with palm sugar +/- brandy.
