Modified from Tassajara Whole Wheat Muffin Recipe

Recipe Ingredients for Orange Whole Wheat Muffins

1 1/2 cup white flour
1 cup whole wheat flour
1 1/2 cups orange juice
1/2 cup yogurt
1 egg
1/4 cup butter
1/4 tsp salt
1 tbsp baking soda
2 tsp baking powder
1/4 cup sugar
1/2 cup raisins
1 tbsp Crisco

Recipe Directions for Orange Whole Wheat Muffins

  1. Preheat stove to 400 degrees

  2. Cover raisings with boiling water in a small dish

  3. Grease muffin tins with Crisco

  4. Mix dry ingredients in a large bowl

  5. Beat the egg

  6. Mix wet ingredients in a medium bowl

  7. Add the egg to wet ingredients

  8. Strain raisings and pat dry with a paper towel

  9. Gently fold raisins into dry ingredients

  10. Pour wet ingredients over flour mix and gently mix with spatula until smooth

  11. Do not over-mix
