Veggies stir-fried in a sweet orange ginger sauce

Recipe Ingredients for Orange Veggie Stir-fry

1 cups carrots, thinly sliced
1 1/2 cups broccoli florets
1 cup celery, thinly sliced
1 cup onion, thinly sliced
3/4 cup bok choy, chopped
3/4 cup peas
1/2 cup green bell pepper
2 tablespoons low-sodium soy sauce
3/4 cup orange juice
1/3 cup honey
1 1/2 teaspoons fresh gingerroot, grated
1 teaspoons vegetable oil

Recipe Directions for Orange Veggie Stir-fry

  1. To cook

  2. Heat oil in a large skillet over medium-high heat.

  3. Stir fry veggies until tender and crisp.

  4. Add the orange juice mixture. Salt and pepper to taste. Add a pinch of cayenne pepper to the vegetables if desired. Bring mixture to a boil for 1 minute, remove from heat and serve.
