A light, vibrant, veggie soup to enjoy warm or cold. (please note I used a small chunk <11g> of fresh turmeric root in my recipe)

Recipe Ingredients for Orange Vegan Soup

495 grams Sweet Potato
410 grams Squash, Winter, Butternut
650 grams Carrots
180 grams Onions
35 grams Ginger Root
13 grams Garlic
1 cup Stock
2 oz Wine
2.6 oz Tomato Paste
4 cup (8 fl oz) Water

Recipe Directions for Orange Vegan Soup

  1. Peel and chop potato, squash, carrots, onions, ginger, tumeric, and garlic.

  2. Add all ingredients to large pot.

  3. Simmer gently until all veggies are extremely tender.

  4. With stick or traditional blender puree soup till smooth, adding water if needed to improve consistency.

  5. Serve warm or chilled garnished with fresh herbs, coconut cream or yogurt swirl.
