Orange-Teriyaki Stir Fry Recipe

A great alternative to take-out, and certainly better portioned and lower in calories. Feel free to change up any ingredients. I usually would use chicken breast, but I didn't have it in when I made this recipe.

Recipe Ingredients for Orange-Teriyaki Stir Fry

2 thigh, bone and skin removed Chicken, Thigh, Meat Only
0.5 cup Boil-in-Bag Brown Rice
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
0.5 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
2 fruit yields Orange Juice
2 tbsp Soy Sauce

Recipe Directions for Orange-Teriyaki Stir Fry

  1. Boil the rice for about 10 minutes (or until ready). Put soy sauce into the water to add extra flavor.

  2. Remove skin, fat and bone from the chicken

  3. Chop the chicken into smaller, bite-sized pieces

  4. Chop the onions into small pieces

  5. Put the chicken and onions in a large pan. Put on a low-medium temperature. Squeeze the juice from 1/2 of an orange. Add in 1 tbs. of teriyaki sauce.

  6. Chop the peppers, add to the pan.

  7. Remove the rice from the boiling water. Add to the pan. Add in the remaining orange juice (1.5 oranges) and 1/2 a tbs. of teryaki.

  8. Add two eggs and mix them into the stir fry. Add a few splashes of soy sauce.
