Pureed carrot & onion soup with chicken stock

Recipe Ingredients for Orange sented Carrot Soup

4 cups of carrots
3 cups onions
2 tablespoons olive oil
2 tablespoons fresh orange zest
1 teaspoon salt
1 teaspoon oregano
32 oz chicken stock
32 oz water
4 oz chicken breast (cooked and chopped)

Recipe Directions for Orange sented Carrot Soup

  1. Put 2 tablespoon of olive oil in large stock pot over medium heat.

  2. Add carrots, onion (can be in large chunks), salt and oregano. Cook until the onions start to caramelize on edges.

  3. Add the zest of one fresh orange, the chicken stock & water. Cook until vegetables are tender.

  4. When carrots are tender put stock pot ingredients in blender and blend until smooth. I only blend of the carrots and use a potato masher on the other half. Put blended soup back into stock pot and add the chopped cooked chicken breast.
