Recipe Ingredients for Orange and Radish Salad with Cinnamon Vinaigrette


Vinaigrette:
1/3 cup olive oil
1/4 cup lemon juice
2 tablespoons orange juice
2 1/2 teaspoons sugar
1 teaspoon Cinnamon
1/2 teaspoon Ground Cumin
1/8 teaspoon Cayenne Pepper
1/8 teaspoon salt

Salad:
3 seedless oranges, peeled and thinly sliced
1 cup fresh radishes, thinly sliced
6 oz baby spinach (or 6 cups torn spinach)
1/4 cup sliced almonds, lightly toasted

Recipe Directions for Orange and Radish Salad with Cinnamon Vinaigrette

  1. Mix vinaigrette ingredients in small bowl until well blended.

  2. Mix all salad ingredients, except almonds, in large bowl.

  3. Toss half of the vinaigrette with salad just before serving. Sprinkle with almonds. Serve with remaining vinaigrette.
