Recipe Ingredients for Orange and pumpkin loaf

200 grams of pumpkin
1/2 cup of brown sugar
6 tablespoons of milk
2 tablespoons of Becel light margarine
1 tablespoon orange zest
1/2 cup chopped almonds
1/2 cup of raisins
2 eggs
2 cups of wholewheat flour
1 tablespoon of baking soda

Recipe Directions for Orange and pumpkin loaf

Peel and chop pumpkin and steam until soft. Strain and leave to cool. Sift the flour and baking soda.In a mixing bowl dissolve the sugar in half the milk. Add margarine and orange rind and beat til smooth. Preheat oven to 180C. Mix in the almonds and raisins. Mash the pumpkin and mix it in. Add lightly beaten eggs and milk. Fold in flour. Spoon into a greased loaf tin about 20cm long. Bake for about an hour.
