Recipe Ingredients for Orange Orzo Pasta Salad

1/2 cup dry Orzo
1 orange
1 tsp. olive oil
2 tsp. Dijon mustard
2 tsp. white wine vinegar
1 tsp. red chili pepper flakes
1 tsp. dried parsley
1/2 cup peas
1/2 cup chopped broccoli
1 cup chopped carrots
2 tsp. Parmesan cheese

Recipe Directions for Orange Orzo Pasta Salad

  1. Cook orzo pasta 7-9 minutes until al dente.

  2. Combine juice of 1 orange, olive oil, Dijon mustard, white wine vinegar, red pepper flakes and dried parsley.

  3. Add cooked orzo to the vinaigrette.

  4. Add peas and chopped broccoli.

  5. Top with Parmesan cheese.
