Recipe Ingredients for Orange-Glazed Chicken with Confetti Quinoa

1/3 cup orange juice
1 tbls soy sauce
2 tsp honey
1 1/2 tsp cornstarch
1 tsp grated ginger
2 tsp canola oil
2 tbls green onion
2 tsp minced garlic
1 tbls orange peel
16 oz chicken breasts
1/3 cup quinoa
2/3 cup water
1/2 tsp salt
1/2 cup zucchini
1/2 cup broccoli
1/4 cup carrot
1 tbls lemon juice
1 tbls olive oil

Recipe Directions for Orange-Glazed Chicken with Confetti Quinoa

  1. Chicken: Whisk 1st 5 ingredients in small bowl until dissolved.

  2. Heat oil in skillet and add green onion, garlic, peel & saute 1 min.

  3. Add chicken and saute 3 mins.

  4. Stir in orange juice mixture and saute 4 mins.

  5. Divide chicken quinoa and spoon chicken over.

  6. Quinoa: Cook quinoa for 12 mins.

  7. Stir in remaining ingredients, cover and let stand off-heat for 10 mins.
