Recipe Ingredients for Orange Ginger Pork Stir Fry

4/5 lbs pork loin
1 red pepper
1 lb snow peas
2 carrots
2 cups shredded cabbage
9 green onions
4 oz fresh ginger, minced
1 tsp garlic, minced
1/4 cup sweet corn
1/3 cup low acid minute maid orange juice
1/4 cup cornstarch
1 tbsp soy sauce
2 tsp miso paste

Recipe Directions for Orange Ginger Pork Stir Fry

  1. Slice pork in thin, 1/2 x 2 inch pieces. Peel ginger root and mince to make 1/4 - 1/3 cup. Combine orange juice, cornstarch, soy sauce, miso paste, and half of the ginger in a small bowl. Whisk till smooth. Add pork, and stir to coat pork evenly. Let sit for a couple of hours or as little as 30 minutes.

  2. Peel and slice carrots in matchstick size. Seed and slice peppers in long strips. Slice green onions. Rinse all veggies.

  3. Heat a skillet or wok with a little bit of oil. Stir fry remaining ginger and garlic for a few minutes until fragrant. Add pork (reserve marinade) and stir fry till brown. Set aside. Add carrots, corn, onions. Stir fry until tender. Set aside. Add cabbage, cook until it has shrunk, about 6 - 8 minutes. Add snow peas. Add vegetables and pork back to pan. Pour remaining marinade from pork in pan, stir to coat. Heat through and serve hot with rice or noodles.
