Recipe Ingredients for Orange Ginger Chicken with Vegetables

6 oz Chicken Breast, sliced into small pieces
1 t sesame oil
1/2 medium onion, sliced
2 T fresh ginger, grated
2 cloves garlic, minced
1 cup shredded carrots
3 cups bok choy, chopped
1 cup mushrooms, sliced
3/4 cup chicken stock
2 T orange juice concentrate
2 T soy sauce
1 t cornstarch

Recipe Directions for Orange Ginger Chicken with Vegetables

  1. Saute the chicken in 1/2 t of sesame oil over medium high heat. Remove from pan when lightly browned, but not cooked through. Reduce heat to medium.

  2. In the same pan, heat another 1/2 t. sesame oil over medium heat and add the onion, ginger, and garlic. Stir-fry until fragrant, add the vegetables and stir-fry for a minute or so.

  3. Add the chicken stock, orange juice concentrate, soy sauce, and the chicken.

  4. Bring to a boil, cover, and cook for 5 minutes until the chicken is cooked through and the vegetables are soft.

  5. Make a slurry with the cornstarch and 1 t. cornstarch, add to the mixture, and bring to a boil.

  6. Enjoy!
