?2 cups all-purpose flour ?1 tsp baking powder ?1/2 tsp baking soda ?1/2 tsp salt ?1 cup sugar ?1 large egg, lightly beaten ?1/4 cup canola oil ?2/3 cup orange juice ?2 tsp grated orange zest ?2 cups fresh cranberries, chopped

2 cup Flour, All Purpose
1/2 tsp Salt, Table
1/4 cup Sugars, Granulated
1 large Egg, Whole
3/4 cup Orange Juice
3/4 cup Dried Cranberries
1/4 cup Margarine

Recipe Directions for Orange Cranberry Muffins

  1. Preheat oven to 400 degrees F and line muffin pan with paper muffin cups.

  2. In a large bowl, combine flour, baking powder, baking soda, salt and sugar. Combine with a whisk.

  3. In a small bowl, add beaten egg, oil, orange juice and zest. Stir well.

  4. Make a well in the flour mixture and add wet ingredients. Stir until just moist, being careful not to overmix.

  5. Fold in chopped cranberries. Spoon batter into prepared muffin pan. Bake for 16-18 minutes, until muffins are golden and spring back when touched.
