Recipe Ingredients for Orange Chocolate Oatmeal Cookies

2 oranges
1 egg
1 tsp vanilla extract
1 1/4 cups almond meal
1 cup rolled oats
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup pine nuts
1/2 cup pistachios
1 T orange flower water
1/2 cup dried blueberries

Recipe Directions for Orange Chocolate Oatmeal Cookies

  1. Boil whole oranges in enough water to cover for two hours, then drain and leave to cool.

  2. Preheat oven to 375. Line a large baking sheet with parchment paper and set aside.

  3. Puree whole oranges in a food processor and add the vanilla, almond meal, baking powder, baking soda and salt, and the egg, through the chute while turning.

  4. Remove the bowl from the machine and add the chocolate and rolled oats by hand.

  5. Dose out batter on the tray and bake for 13 minutes.
