a healthy bread made from cherimoya (aka chirimoya/custard apple) and fresh orange

Recipe Ingredients for orange cherimoya bread

1 cup cherimoya (approx. 1 whole fruit)
5 tbsp orange zest (from 1 med orange)
1/2 cup fresh orange juice (juice from same orange)
1/4 cup apple sauce
1/4 cup soy milk
2 tsp vanilla
1 egg
2 egg whites
1 cup whole wheat flour
1/2 cup soy flour
3/4 cup ground flaxseed
2 tsp baking powder
3/4 cup golden brown sugar
1/4 tsp salt
2 tsp cinnamon
1 tsp ginger

Recipe Directions for orange cherimoya bread

  1. preheat oven to 350F

  2. cut open cherimoya and remove peel and all seeds

  3. mash cherimoya well

  4. take one medium orange, and grate off all zest (should amount to 5 tbsp)

  5. juice orange (should get about 1/2 cup juice)

  6. in one bowl, mix dry ingredients (whole wheat flour, ground flaxseed, soy flour, sugar, baking powder, salt, cinnamon, ginger)

  7. in another bowl, mix the wet ingredients (egg and egg whites, soy milk, applesauce, mashed cherimoya, orange juice, orange zest, vanilla)

  8. mix wet ingredients into dry ingredients until moistened

  9. grease an 8 1/2 x 4 1/2 loaf pan with butter, margarine or non-stick spray

  10. pour batter in loaf pan. bake between 60 and 90 minutes until dark brown (this time will vary depending on your oven), or until a toothpick inserted in the center comes out clean

  11. Let cool in the pan on a rack for at least 10-15 minutes before unmolding to cool completely on the rack
