Recipe Ingredients for Orange Cashew Chicken

1 lb chicken breast, boneless, skinless and cubed
2 medium carrots, sliced
1/2 cup celery, chopped
2 tbsp olive oil
3 tbsp cornstarch
1/4 tsp ground ginger
1 cup orange juice
1/8 cup honey
3 tbsp soy sauce, low sodium
3 cups brown rice

Recipe Directions for Orange Cashew Chicken

  1. Stir fry chicken, carrots and celery in oil 8-10 minutes or until chicken juices run clear.

  2. Reduce Heat.

  3. In a bowl, combine the cornstarch, ginger, orange juice, honey and soy sauce until blended.

  4. Stir into chicken mixture.

  5. Bring to a boil.

  6. Cook for 2 minutes, stirring occasionally or until thickened.

  7. Stir in cashews (only in Kaleb's portion).

  8. Serve over rice.
