Recipe Ingredients for Orange-caramel sauce

1/4 cup sugar
1/4 cup water
1 cup orange juice
1 tbsp orange zest
2 oranges

Recipe Directions for Orange-caramel sauce

  1. Make a medium caramel with the sugar and water; turn off the heat when the syrup is still gold or it will get very dark and slightly bitter before it stops cooking.

  2. When the caramel is done but still hot, toss in the orange zest and stir. Allow to cool down further.

  3. Blend in the orange juice. Reduce to a syrup.

  4. Segment the orange over a bowl; add the juices to the sauce and reserve the segments to garnish the dessert.
