Recipe Ingredients for Orange bran muffins

2 cups whole wheat flour
2 cups all bran cereal
2 tsps baking powder
2 tsps baking soda
1/2 tsp salt
1 cup brown sugar
1/4 tsp nutmeg
2 eggs
1/2 cup canola oil
1 1/2 cups buttermilk
4 tbsps orange juice
2 tsps orange rind
2 cups chopped dates

Recipe Directions for Orange bran muffins

  1. Measure first seven dry ingredients into mixing bowl. Stir thoroughly to blend. Make a well in centre.

  2. In another bow beat egg until frothy. Mix in oil, buttermilk, orange juice, rind and dates. Pour into well. Stir just enough to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake at 400 F oven for 20 to 25 minutes. Yield: 12 extra large muffins
