Low calorie pork tenderloin recipe

Recipe Ingredients for Orange Basil Pork Medallions

1/3 cup couscous
1/2 cup orange juice
2 T water
1 tsp cornstarch
1/2 tsp instant chicken bouillon granules
1/4 tsp dried basil, crushed
1 dash pepper
8 oz pork tenderloin, cut into six slices, pounded to 1/2 inch thickness
2 tsp parsley

Recipe Directions for Orange Basil Pork Medallions

  1. Prepare couscous according to package directions. For sauce, in a small bowl stir together orange juice, water, cornstarch, bouillon granules, dried basil and pepper. Set aside.

  2. Spray a cold medium skillet with nonstick coating. Preheat over medium heat. Add pork slices to skillet; cook for 3 minutes. Turn slices over and cook 2 minutes more or till just slightly pink. Remove pork from skillet; keep warm.

  3. Stir sauce; carefully add to the skillet. Cook and stir over medium heat till thickened and bubbly. Cook and stir 1 minute more. Stir parsley into couscous.

  4. Arrange couscous and pork on small platter; spoon sauce over pork.
